anyone got a simple receipe for a cake without eggs?

Want to take a cake into nursery for my daughter's birthday. She's just told me that one of her little mates has an egg allergy so obv an eggfree cake would be required. Anyone know how to make a good one? I am not a very good baker so the easier the better. Thanks in advance to anyone who can help.

As far as I know, nurseries don't allow home made cakes for food hygiene reasons. It might have t be shop bought. Check with your nursery!

In theory you can substitute mashed bananas for eggs in any cake. I've only ever done it with carrot cake/banana bread and it's worked both times. But can't advise on whether you need something shop bought (maybe take shortbread or something instead then?)

If you haven't got time to check, how about making cornflake cakes or similar? Just remember to check the chocolate- some has lecithin, which is an egg derivative. (soya lecithin is fine). DS's best friend has an egg allergy so am used to catering for it!

If you do still want to make a cake, let me know. I have great recipes for egg free Victoria sponge and chocolate muffins (which can also be baked as a single cake).

Many thanks, both of you. I have decided to risk attempting an egg free carrot cake with tasteless pink glitter frosting to counteract the healthiness of the carrots. If it's not allowed we'll just do the birthday song and bring it home.but if it is allowed everyone will be able to have a bit.

Marzipanned, thanks so much for your carrot cake with extra bananas idea. I used a Mary Berry recipe but replaced the eggs with bananas and it looks about a million times better than my usual efforts! I have a long record of producing disastrous birthday cakes (it is a bit of a running joke in the family) but this one may be the exception that proves the rule. How unexpected that this should happen with an experimental egg free cake! I am v happy.:)

I'm on a mobile so can't link, but my mum used to bake a fabulous eggless chocolate cake. It was a Mrs Beeton recipe
