Have one green pepper in the fridge. What can I do with it (to feed the two of us)?

TIA

chop it up, cook with bacon, chopped onion and whatever other veg you have, add a tin of tomatoes or some chicken stock, serve with rice

love that meal, tastes different every time depending on whatever's in the fridge!

Chop into pieces and roast with onion, new potatoes, chorizo and some orange zest. Serve with poached eggs.

Yes, I do have more than just a green pepper! I just want to use it today as it has been lingering for a while...

Thank you for the suggestions. Don't really like them raw so will fry it up...

Make massala omelettes.

Finely chop your green pepper, an onion, a clove of garlic, a chilli. I sometimes put a bit of courgette in there too. Fry this for a few mins. Add salt and pepper and chopped coriander. Beat your eggs and pour over the pepper mixture. Cook the omelette.

It's nice with toast and mango chutney.
