I want to cover DS2's cake with a white chocolate paste instead of fondant icing. I have a recipe, Mich Turner one although never used her recipes before. The recipe says to use caster sugar but I'm worried this will make it grainy so I think I will replace with icing sugar.
Any other tips? I have made dak chocolate paste before which was fine, if somewhat messy, but I don't seem to get on well with white chocolate.
