Wow food for a BBQ?

I do cook, but don't particularly enjoy it, although I love entertaining.

We are having a BBQ in a couple of weeks time...can you suggest food other than the normal burgers, sausages, marinated chicken. Not too technical to prepare/cook but something that will be appreciated by a trained chef who we've crazily invited.

Fresh pineapple is amazing on a BBQ.

Asparagus spears wrapped in steaky bacon or Parma ham
Salmon fillets covered in fresh chopped dill, wrapped in tinfoild parcels and put on the barbeque
Sausages marinated in honey and mustard

Slice aubergines into big slices about I/2 inch thick (along the length) and rub with salt and olive oil. BBQ. Delicious! Also, split a banana and BBQ with dark chocolate put in the split at the last minute and serve with ice cream. Haloumi makes great kebabs. Marinaded raw prawns on skewers ( don't buy ready cooked as they just go chewy ) cook lightly.

Good salads make a big difference too. You can have quite plain meat, etc and a few 'wow' side dishes can look really impressive. Do you have ideas for sides?

BoohPear · 08/08/2013 15:34

chicken pieces, mushrooms, peppers cut into chunks, marinated in a BBQ seasoning and put on skewers. Delicious!

Haloumi marinaded in lemon juice, olive oil and chilli flakes. King prawns in lemon juice and chicken tikka kebabs.

I would do a whole butterflied leg of lamb. Since you have invited a chef he can oversee it. You can serve it with flatbreads and humous/baba ganoush/tzatziki, a Greek salad, and some halloumi slices. Yum.

Don't marinade halloumi, it's sacrilege.

Mediterranean veg & halloumi skewers. Cut up chunks of courgette, pepper and red onion. Put in a bowl and swish a bit of olive oil and oregano round them. Thread onto skewers with chunks of halloumi. Yum!!

New potato salad with spring onions, crispy bacon and a dressing of natural yogurt/mayo/mint with snipped chives on the top. Absolutely delicious!

Pork or chicken kebabs with peppers shallots and cherry tomatoes marinated in natural yogurt, curry paste and a little mango chutney.

Beer can chicken - cooked on the BBQ. Never fails to impress....just google it and you will get proper recipe but simplest method is the bit a large whole chicken and one vs of your preferred beer per chicken. Drink half the beer (hence the importance of your preferred beer) and stick the chicken on top of the beer can (iyswim) cook uptight on the BBQ ( a closed weber or other lidded style). The most moist chicken you'll ever eat!!

Ones I like are:-
Gammon ham and pineapple kebabs
asparagus wrapped in parma ham
or parmesan crust coasted asparagus
halloumi any way it comes - nice with roasted vegetables
artichoke and 3 cheese dip
waldorf salad
Moroccan cous cous with raisins and pine nuts etc
new potato's roasted with oil, garlic and bacon bits
prawns kebabs with sweet chilli marinade
or prawns coated in coconut are nice too
sweet potato chunks roasted
freshly made coleslaw - easy and much nicer than shop brought stuff
mozerella and beef tomato salad

ohhh yum yum I'm hungry now!
