Courgettes??

I've just been donated 2 GIANT courgettes but not sure what to do with them. possibly going to put some in a curry but they'll be loads left. Any ideas? Thanks!

Chop them and freeze them flat, then give them a shake and use them as needed.

Slice into oblong or circular slices about the thickness of a pound coin, brush with olive oil and grill (on a bbq or ridged pan if you have one) until tender, a couple of min. Toss with torn up buffalo mozzarella, mint, the best olive oil you have, salt & pepper.

Eat with crusty bread and Parma ham.

Oh and of course you can grate the courgette and onion (and potato too if you like), mix with egg, fry as crispy pancakes and eat with sour cream.

Pasta sauce
Fry pancetta/bacon with chopped courgette, stir in creme fraiche and grated cheese until it forms a sauce

I make a ratatouille type thing (v technical!) by frying chicken strips and chorizo, adding chopped peppers onions and courgette and then tinned tomatoes
