what do you put in your guacamole?

Ideas please....
I've got 7 avocados which we got for dd's birthday party last Sat but they didn't ripen in time, so dh and I get to eat them all, which is great.
However I'm rather bored of my usual guacamole recipe, which is:
avocados
toms
garlic
chilli
lime

Any ideas how I can vary it a bit? If I put onion in, how much should I use?

A friend of mine always puts mayonnaise in his and it is rather fab.
Coriander leaf?

finely chopped spring onions or a small finely chopped red onion, no garlic and yes to mayo and coriander, and please remove the tomato seeds and dice the flesh finely, and a slug of olive oil and salt and white pepper.
And apparently the only way to mash the avocado it is with your hands

Mayonnaise sounds interesting - I may give that a go. Don't have any coriander ATM.
Of course with 7 avocados I can try out everything and compare.

Do you skin the toms? I always used to then I decided it didn't make much difference.

yes skin them in hot water

with seven avocados you would do well to add a lot of lime juice as it will preserve then slightly unless you are going to eat the ensuing trough of guacomole in one sitting

agree no chopped garlic - if you want a mild hit just rub the bowl in which you are going to mash the avocados with a cut clove - I love guac but not with raw garlic bits. Spring onion finely chopped also works - soured cream rather than the mayo works

am a bit of a garlic freak but with onion as well that may be overkill.

lime juice, coriander (which you don't have!), crushed garlic, salt, pepper, tabasco. Yummy!

ok it is not guacomole but a lovely pasta sauce...
Saute onion and garlic until softened but not browned, add 3 mashed avocado and stir until heated through, add a splash of lemon juice and enough cream to make it into sauce consistency. Add to pasta with parmesan cheese mmmmmmmm...
