OK so it's polenta, right?

If it is can I use instant polenta to make cornbread.

And what's the difference in cornmeal and semolina?

Just as an aside, while I remember and somebody is hopefully around to answer.

It is from maize. You can use instant to make cornbread.

Semolina is from a hard durum wheat grain and used to make pasta although it makes a nice typically English milky pudding too (remembers Fifties childhood and school dinners). semolina recipes here
