why the hell does this keep happening ???

Ok so this is my 5th attempt at making fairy cakes , the sponge is good but the butter icing keeps melting within seconds Confused

What am I doing wrong ???

I let the cakes cool etc

Are you cooling your butter icing? Also, how are you getting it on the cakes? If you're handling it a lot (eg in a piping bag) it's more likely to melt.

The weather won't be helping either

What butter are you using and how much icing sugar?

I had this problem, the butter would melt through the piping bag and end up as a molten glob on the cupcake. My problem turned out to be using too cheap butter and I was advised (very possibly by MikeLitoris) to try Lurpak slightly salted which worked a dream! I also added a wee bit extra icing sugar to the mix just to be sure
