Tomorrow night I plan on using up what's in the fridge rather than go shopping. What would you do with these ingredients available

You so don't need to go shopping!

Stuff the peppers with couscous, roast. Serve with salad.

Or make a chicken and bacon pie, served with veg.

Or a million other things!

I'd cook some chicken with the bacon, some onions/garlic, tomatoes (cherry and tinned), a splash of white wine if you have it and serve over the pasta with a side salad. You could also do a stir fry with chicken and the remaining veg and make a sauce from the Hoisin, sesame oil, rice wine vinegar, a little soy sauce and 1/2 cup of water (serve over the Basmati...I do all the time even though it's a no-no).

Thanks for the inspiration. I didn't have enough peppers to stuff one each so instead I sliced the peppers and red onions. Roasted them with the cauliflower and cherry tomatoes. Made a tomato sauce with the tinned tomatoes, balsamic vinegar, brown sugar, pesto and Worcestershire sauce. Added the roasted veg to this then made up some cous cous in chicken stock and stirred this in. Was delicious.
