Summer holiday lunches - any inspiring ideas?

We're all bored of sandwiches and there's only so many times I can do beans on toast or houmous Grin

Mine love a picnic, with lots of different pots of things (stops them getting squished!). Anything from pork pies/sausage rolls to salady bits to fruit for pudding.

Also a good old-fashioned dippy egg with soldiers always goes down well. Or maybe cold pizza with salad?

My favourite Summer holiday lunch was when we had a platter of cold meat, cheese, pate, pickle, coleslaw, cherry tomatoes, cucumber, peppers and served with a sliced french stick. We loved helping ourselves to the selection.

My Dad used to make his speciality cheese and bean eggy bread. Which is simply egg dipped bread placed down in the frying pan lightly brushed with oil. Spoon some baked beans ontop and put slices of cheese on top of that. Place another dipped slice of bread ontop and flip over when the slice on the bottom turns golden to cook the to slice.

Hot dogs
Quesadillas
Eggs and Soldiers
Peanut butter and banana toasties
Sausage rolls
