Any suggestions? I have to take it to work, have access to a fridge and microwave - had to be healthy. The only thing I don't like is fish/seafood of any form.

My friend makes up salad jars for the summer.

I tend to just do a couple of extra portions of whatever we are having for dinner and DH and I have them for lunch the next day.

I cook chicken in a bag with seasoning/herbs and either roast, stir fry or microwave some veggies (or salad when its hot - usually leaves, tomato & some kind of couscous) for dinner & DH takes the leftovers for lunch the next day.

I really like Levantine-inspired food for healthy summer lunches.

I have a tiffin box and have made three salads for the coming week; tabbouleh, carrot & cumin and cauliflower/quinoa/tahini/sesame seed.

I'm going to have a bit of each of these every day and will top off with mezze bits I have in the fridge to keep it interesting: falafel, grilled halloumi, semi-dried tomatoes, feta, toasted flaked almonds, tzatziki, toasted pitta pieces and spiced houmous.

Do you steam the veg first MrsBert ? I like to make Italian inspired salads by steaming whichever veg. you fancy till it's 'al dente' and make a lovely lemon\olive oil garlic \spring onions and herbs dressiing in the bowl which you then put the still quite warm veg. into and ,like you, keep in the fridge.

same with quinoa or whole org. rice etc.

No, the carrot salad is just raw carrot that's gone through the mandolin, mixed with toasted ground cumin, sesame seeds and a sesame/lemon/oil dressing.

I like raw cauliflower, but I have griddled it a bit in the past to bring out the nuttiness.

I like the blog justbento.com for inspiration. With a microwave and a fridge, you can pack anything! I keep a freezer stash, make extras for dinner, and have easy standbys like fried rice/noodles when I'm feeling lazy. (The standby for you could be cheese sandwich if you aren't a hot food sort of person)!

The cauliflower has to be very fresh though which is not common in England! You carrot salad sounds lovely MrsBert I love fennel and celeriac done through a mandolin too!
