Can anyone suggest a recipe that would make a good birthday cake, suitable for a diabetic?
thanks xx

I tired to make my mum a diabetic cake for her last birthday and it was a disaster - turned out rubbish. She ended up just having a very small bit of normal cake in the end.

What about this inventive cake as an alternative?

I'm not sure whether this Chocolate, orange and prune cake would be suitable for diabetics but it doesn't contain refined sugar and only sweetened with prunes and orange juice.

Type 1 diabetics can eat 'normal' cake - they just need to adjust their insulin, as they do for any food/exercise etc.

My DD is Type 1 diabetic and we adjust her insulin accordingly. She eats a normal, healthy diet and I just give her 'normal' cake if she's having something like this. The only thing you might want to do is be able to give them details of the carb amount in the cake (which will be difficult if you haven't done it before or don't know how to) in case they are carb counting. I don't agree with diabetic foods as such, the manufactured ones are expensive and taste like crap. I would just make a normal lovely cake if I were you. :)
