Over the weekend, we've found ourself spending a fortune on crap eating out after staying out too late to get the toddler back for a timely dinner.
I meal plan already, but this doesn't allow for this kind of situation really. So I'm after ideas for freezer/storecupboard dinners that can be just grabbed on the way out should the weather hold fair for last minute afternoon beach trips.
I'm struggling to come up with much. I thought maybe small loaves stuffed with roast veg and cheese which would defrost while we're counting pebbles, or maybe chilled soups which we could decant into a thermos? Maybe freeze some dips/baguettes and keep a stash of tortillas?
Any advances?
