I need a summer stewing beef recipe

Just this really. I am working my way through the freezer so that it is empty before we go on summer holiday.

I have come across some stewing beef and normally I'd use it in a casserole, but can't face one in this hot weather.

Can anyone suggest other ways to use it up?

Not amazingly summery but how about a Chinese style beef casserole? I found one on the BBC good food website (sorry, on phone and can't link) but I did it last week with egg fried rice, stir fried veg and prawn crackers. Very nice and not too heavy.
