ideas for salmon please?

I normally cook salmon in parcels with a knob of butter and lemon slices and serve with new potatoes and green beans which is nice if a bit boring

I have some nice salmon fillets to cook tonight but fancy something different, any ideas? How do you cook your salmon and what do you serve it with?

i do the one with pesto, but use the chilli pesto to spice it up.
Make a crust with breadcrumbs, pesto and lemon zest and then cook in the oven.

Or do a honey soy garlic marinade and then grill them.

Cook in parcel as you suggest (I add olive oil/lemon/splash vermouth or white wine) and serve with a couscous salad - cook couscous as per instructions, cool. Blanch (frozen or fresh) broad beans and peas and quickly sauté some little cubes of courgette in a little olive oil. Add to couscous with loads of chopped herbs - parsley, mint, basil, coriander all work. whisk together juice of a lemon, 4 tbsp olive oil, 1 crushed clove garlic and toss the whole thing together.

I also like a green salad on the side. Yum!

Or griddle/grill with soy sauce and serve with stir fried veg and noodles.
We also like salmon flaked into pasta pesto with green vegetables - dcs like broccoli but sautéed courgette, peas, broad/French beans etc are also v good.

teriyaki style marinade (soy sauce, honey, sesame oil) + grill/panfry?

Sandwich two bits with mixture of creme fraiche, horseradish, squeeze of lemon, chopped coriander or parsley and cook in a closed foil parcel in about half a glass of wine, in oven. Tastes amazing! If you are feeling organised you can do double amounts and have cold as a salad the next day too.

Sauce made from Creme fraiche and water cress and maybe something else it was a WI recipe. It was lush though Grin

I usually sprinkle with Cajun and wrap in foil in the oven but think I am going to do the pesto/breadcrumb idea tonight Grin
