Suggestions for using up porridge oats?

We have a huge tupperware tub of them which have been sitting in the cupboard for months.

I do like baking but can only follow recipes - I have no baking imagination! , any thoughts to use them up in simple-ish baking recipes would be appreciated.

I chuck handfuls of them into cookies, and things like banana bread, if that helps?

Flapjack, oaty fruit crumble, make your own cereal bats to scoff for breakfast.

Bars, bats would not be delicious

I put them in home-made (bread machine !) bread as well. Replace about 1/4 of the flour with oats, and the sugar with honey.

flapjack - with fruit in if you like.

Oaty Cookies

250g unsalted butter (room temp to soften)
250g light brown soft sugar
2 eggs
2-4 tsp vanilla
About 390g porridge oats
150g plain flour
1 tsp baking powder
A bit more cinnamon than seems sensible
200-400g chocolate chunks or sultanas or whatever

heat oven to 180c/fan 160
cream butter & sugar together in large bowl.
beat in eggs & vanilla
add oats, flour, baking powder & cinnamon & mix until well combined.
stir in chocolate/sultanas & mix well.
divide into blobs about the size of walnuts & space well apart on baking sheets lined with baking paper & press down lightly.
bake for 15-20mins until golden at the edges.

Frangapani has my 2 offerings: flap jack and crumble topping - lovely either made into crumble, or make the crumble topping, squish into balls, cook for 20 mins, and then scatter over stewed fruit, or berries defrosted from the freezer.

Porridge for breakfast?

There are enough oats for me to try everything :)

And coming in a bit late on this thread but oats help lower your blood pressure and cholesterol :)

I love love love flapjacks.

We use them for all these things, but usually as part of a thick topping for crumble.
When DS was 5 he did Katy Morag as a topic in school, and we learned how to make 'porridgies' from one of the books. They are like flapjacks, and 13 years later he still makes them half a dozen times a year.

100g / 4oz butter
75g / 3oz soft brown sugar
30ml / 2 tablespoons golden syrup (or light corn syrup)
200g / 8oz rolled oats (porridge oats)
pinch of salt

Melt butter in a large pan over a low heat. Add sugar and syrup and salt.
Mix well.
Stir in rolled oats. Mix very well. Spread mixture evenly in tray with palette knife.
Bake at 160C fan for 25-35 minutes, until golden brown.
Take out of oven. Let cool. Cut into squares and store in airtight container.

Swedish chocolate balls: combine oats with butter, powdered chocolate and cold coffee, roll into balls, roll through coconut or pearl sugar and put in the fridge to set.

Gorgeous and no baking required! If you're interested I'll look up the quantities and post.

A handful of oats added to stews / bolognese etc makes a lovely thick rich sauce and ou would never know they are in there.

Wild yes please can you let me know the quantities for Swedish Chocolate Balls.

100g butter (warm/soft but not melted)
1dl sugar
3dl oats
2-3 table spoons cocoa powder
1tsp vanilla sugar/flavouring
2tbsp cooled coffee

Plus coconut or pearl sugar for the outside coating.

Combine ingredients and roll into balls (I do golf ball size). Roll balls through coconut or pearl sugar. Store in fridge.

Not baking, but use them to coat herring with before frying them. Yum.
