Sushi rice ball help

Does anybody make sushi rice balls / shapes (onigiri)?

I've seen recipes for them and really fancy giving it a go, but I want to make them the night before to go into lunchboxes. Is it ok to do this, are they best kept in the fridge or do they go hard? Is it safe to eat after sitting in a lunchbox all morning?

Hope you can advise me!

Yes, keep in the fridge. Would maybe get a coolbox (you know the insulated lunchboxes) but would probably be fine without.

I've seen someone (on t'internet) using clingfilm to shape them. Will definitely be giving them a try.

Any favourite filling recommendations?

Make sure you use sushi rice, anything else yo ave to cook to mush.

Use cling film to shape (or in a mold) and leave on until eaten.

Make sure your hands are wet when making the balls.

Anything savoury is good. Like tuna, omelette, umeboshi... Oh yums!!

I like crab as a filling, cucumber works really well and it very light and refreshing too.

Didn't realise they did molds, but have just seen some nice shaped ones on ebay. Will give the clingfilm a go before I go spending money.
