Receipes for the heatwave

My OH has just told me that for the next two weeks or so forecasts are suggesting it will be 30 degrees. All well and good, but what can I feed us while having a 2.5 and 7 week old hanging off me?

DD2 is ok with a sandwich or finger food as she has her big meals at nursery during the week.

My OH however is the pain. He is a grazer and sees finger food and salads as food for grazing so that's out. He is also a big fan of meat. We have at least one fish and one none meat and fish meal a week. He will tolerate the fish meal but has a heart attack when I cook the none meat and fish meal.

I would love to do take aways for the next two weeks, but he is so tight and on a "health kick" so that's not going to happen.

I have thought about fijitas and Salmon but what else?

Barbeque? If he's so meaty he can stand outside and cook it!

I have loyally eaten his bbq 3 times. All three have ended up with me in a&e. Loyalty and love can only go so far and I refuse to touch anything that he sticks on that thing. No matter if I have pre-cooked it.

Grin What about some meaty salads then? You can cook when it's cool and then have salade niçoise, chicken Caesar.

What about making up some bean/pulses salads? Chick pea nice with roasted butternut squash and hallumi, or with feta and parsley. Mix bean salad? Green lentils with chorizo, spring onions cherry tomatoes?

We eat loads of salads when it's hot (we live a bit further south and have had up to 42 degrees in the summer).

Salads like these are very popular in the family:
Spicy chicken, mango & jalapeño salad
Mexican salad with tortilla croutons
I tend to make refried beans with those, but it's not really necessary.

Smoky paprika salmon with avocado, tomato & jalapeño salad
Superhealthy salmon salad

Salade Nicoise is nice too - I tend to either add things I'd like or leave out bits I don't want, but the eggs, green beans, lettuce, tuna and potatoes are usually there.

Pita is also nice, and very easy to prepare.

Something like this might also be nice: Asian beef salad and Beef with grilled pumpkin, corn, basil & chilli

This is also very nice, but does take a bit longer to make than some of the other dishes: Summer couscous salad
You could serve that with meat if you want.

lamb chops marinaded in lemon, garlic, chilli and olive oil.
serve with cold new potatoes, or gnocchi, and salad

or kofte, with lots of tabbouleh, pitta bread, and dips
