Help with basic sponge cake please

Hi, I am generally good at baking, mainly tarts cheesecakes etc, but i just wanted to bake a simple light sponge to make a strawberry fresh cream gateaux, i tried a victoira sponge and it just did not rise, then i tried another one without butter mainly eggs and it flopped too, Im not sure what i did wrong and i have a nce mixer so it should have worked out well. any recipes or tips please.

How about an angel food cake? High on sugar but not on fat.

Joy of Baking have a really good recipe. I'll find it x

Did you follow the recipe to the letter? And did you use the right sized tin?

Also - what was your raising agent - was self-raising flour, or bicarb/baking powder in date?

Both had self raising flour, i may have not mixed the egg one so well when i added in the flour as i was afraid of over mising into the batter and take out too much air. Yes i did use the correct tins.

Hmm, what about the egg and the butter - was the former at room temperature, and the latter softened?

NB if marge, it obvs does not not need to be out the fridge, and softened...!
