What's your favourite on a budget dinner? We are trying to save some pennies. I cook from scratch but don't have a slow cooker. Dh is a big meat fan do needs to be very yummy/filling to convince him its not needed.

Sausage casserole- I use budget frozen sausages,, and two tins of mixed beans. A tin of chopped tomatoes plus any going off veg. I use Rosemary as it grows in the garden, and a dash of Worcester sauce. Add 250ml beef stock, and roast.
If there's any stale bread, I crumb it and use it to top the casserole, for crunch. It's my go to meal at the end of the month, when cupboards are bare.

Dhal, rice, coconut chutney and minty cucumber salad.

Baked potatoes with beany sausage casserole (I use veggie ones).

Eggs, wedges and peas!

Veggie chilli and rice.

sauteed leeks and chorizo with penne pasta in red pesto
