I've had a look online how to make your own ravioli. A lot of recipes suggested using fresh lasagne sheets, easy! or so I thought. I had a go myself the other night and failed miserably. The pasta just wasn't behaving for me.
I tried pressing the pasta together straight from the packet, it wouldn't stick. So tried wetting the pasta with cold water and it wouldn't stick. I tried warm water, still wouldn't stick. Then tried part-cooking the pasta in warm water and it still wouldn't stick. Even tried crimping the pasta together with a fork and it just crumbled and filling just tore through the pasta sheets, and of course it didn't stick so I gave up in the end.
Has anyone had any luck with making ravioli using lasagne sheets? Or will I need to get a pasta machine to make fresh pasta? because I don't think my rolling skills or my wine bottle rolling pin would be up for the job of making fresh pasta.
