Aubergines x3 and chicken breasts- INSPIRATION needed

Help,
I have been too lazy to go shopping today....I have 3 aubergines, some chicken breasts as my main ingredients.

Also in my fridge:
mushrooms
peppers
courgettes
onion
potatoes
milk/ cheese (but am dieting so not too much of these pls)
toms

plently of storecupboard foods like pasta/ cous cous/ chickpeas/ lentils/ beans etc (am out of rice) most spices etc

Logical would have been ratatouille and grilled chicken....but yawn!

Any other inspiring ideas?

hmmm, there's a nice roasted aubergine with tinned toms & cheese thing I've made before. You could do this with roasted chicken and/or pasta.

I have a load of aubergines that need used so eager to hear alternatives!

Could you make some kind of chicken lasagne/moussaka? Or paprika chicken with roasted veg?

Mmmm chicken and roast veg lasagne...that sounds yummy.
Or an enchilada type bake but with veggies too...... think I have wraps left.

Will have to get yoghurt, but the corner shop should be able to handle that! With grilled chicken breasts?

Egyptian Spiced Eggplant (Aubergine) Salad Recipe
Ingredients
2 small eggplant, sliced
5 tablespoons olive oil
1/4 cup red wine vinegar
3 garlic clove, crushed
1 tablespoon lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 cucumber, preferably Lebanese, very thinly sliced
2 tomato, home-grown, not supermarket varieties, very thinly sliced
1/4 cup kalamata olive, pitted, halved
2 tablespoons yoghurt, preferably creamy Greek yoghurt
salt, to taste
fresh ground black pepper, to taste
flat leaf parsley, chopped, to garnish

Directions
Preheat the grill, brush the eggplant slices lightly with some of the oil and cook under a high heat, turning once, until golden. Cut into quarters.

Mix together the remaining oil, vinegar, garlic, lemon juice, cumin and coriander; season to taste with salt and pepper; mix thoroughly; add the warm eggplant quarters, stir well and chill for at least 2 hours.

Transfer the chilled eggplant mixture to a serving dish, and add the cucumber, tomatoes and olives; spoon the yoghurt on top, sprinkle with parsley and serve.
