I need a recommendation for a discerning friend's birthday!!

I got Hugh F-W's fish book for my birthday last year if that helps.

For a classic, with recipes plus background and fine writing, perhaps Jane Grigson's Fish Cookery Book?

Rick Stein is very good for fish recipes.
