I need some quick and easy 'bites' ideas for a charity evening. I don't have huge amounts of time and cont really prepare lots in advance can I (or can I?).

A few of the folks attending will be pocketing food (some are homeless) so I don't want it to be all cupcakes and nuts!

New potatoes, but baked, like mini baked potatoes, with a dollop of cream cheese in each one. Just run some oil on a tray of spuds and shove in the oven

We don't really have facilities to do hot food. I'm thinking things that can be popped into a serviette (or pockets as they did last year - we pretended not to notice).

oat cakes with cream cheese
cheese straws (bought?)
Pitta and dips
Pizza slices

Sausage rolls are easy to prepare in advance and very easy to smuggle.

I might get some packs of those plastic food boxes from the pound shop and ask some folks to 'help me out' by taking leftovers.

I was thinking baby quiches (size of jam tarts). I can't remember the last time I made a sausahe roll!

Depends on your budget but for things to be slipped into pockets I'm guessing you need less messy stuff:

chicken nuggets coujons with chilli dipping sauce
cocktail sausages
sausage rolls/vegetarian rolls
cheese and pineapple
mini-sandwiches
chicken wings
celery, carrot, peppers, cucumber and dips

thick slices if cucumber with garlic soft chesse on top is messy but very nice

Mini pies - the size of a cupcake. Could be made ahead, frozen and reheated (if served warm).

Blinis with sour cream and smoked salmon.

Mini pizza swirls (can be baked in muffin/cupcake cases.

Pulled pork and coleslaw served in puff pastry shells

Frikadeller

Mini hamburgers

Puff pastry swirls or straws with blue cheese or other fillings.

Mini pizza swirls? Tell me more!

I make pizza swirls with a normal pizza dough (yeast, water, flour, salt and olive oil), but some people make them with puff pastry. If you want to, you can just buy the dough/pastry.

You roll out the dough to a rectangle.
Put the tomato base on, as well cheese (grated), ham and other pizza topping. Too much can make the swirls lose their shape, so have to keep that in mind. You can also use other fillings, and if using a sweet dough, you can make them with cinnamon, apple/cinnamon, blueberry/vanilla and so on.

Roll it up like a Swiss roll and cut into slices. Put the slices on baking trays lined with baking paper or in muffin cases, with the cut sides facing up and down.

If using a pizza dough, let it rise until doubled in size, and then bake. If using puff pastry, bake them in the oven.

You can also make pirogi or pasties.

So I made: mini leek quiches, puff pastry with cheese and ham, pizza rolls (ta!) And a tray of chocolate brownie, which I managed to knock onto the opoen door of the cooker as I pulled out the pizzas (fukkit!). We will see if the brownie sets and if I can smother in icing sugar to disguise the cracks. Grrrrrrrrrrrr!!
