Breadcrumb ideas please

Defrosted a load of breadcrumbs yesterday to make stuffing but plans changed. Can't refreeze. Could use as topping for something or use in meatballs etc but wondered if anyone had any other ideas? Thanks

You could use them to make chicken burgers... put skinless chicken fillets in a food processor and blitz until well chopped. Sautee some finely chopped onion and celery and leave to cool. Add cooled onion/celery mix to chicken, add one beaten egg, season and add breadcrumbs. Form in to burger shapes. Put in fridge to firm up. Shallow fry as you would normal burgers.

Thanks all, lovely ideas, will use, just have more than i need for coating / adding to burgers etc but great ideas for another time. One of my faves is chicken or fish rolled in pesto and then breadcrumbs, just incase of interest to anyone else x

Were they fresh when you put them in the freezer? You could oven dry them until crisp and store in an air tight jar (or put them back in the freezer).

They're going to be cooked anyway, so I wouldn't be a bit worried about re-freezing.

YY, I am pretty sure that it's absolutely fine to refreeze bread and the like.

Or you could make breadies. Fry some finely chopped onion, add the breadcrumbs and a beaten egg and fry until golden.

I love them, but no other bugger in our house will eat them, so I hardly ever make them.

Put spaghetti on to boil. Fry 1 large rasher chopped bacon/pancetta per person, remove from frying pan - to bacon fat, add a couple of crushed garlic cloves, a lug of olive oil if it looks too dry and then a good handful of breadcrumbs per person. Fry till golden and crisp, then toss pasta with garlicky crumbs, bacon/pancetta, and any of the following optional bits: parmesan, chili flakes, chopped flat-leaf parsley.

Fry egg, place on top Smile

(This also works replacing the bacon with tinned anchovy fillets and a dollop of lumpfish roe on top)
