Can I freeze aubergine stew?

I made a slow roasted aubergine stew yesterday - just oil, chilli, garlic, aubergine and onion. Could I freeze it today? Sorry if a silly question, have never frozen aubergine before.

Yep, it will be fine. Put it in a tight fitting container and make sure it's completely cool before freezing though as you don't want ice crystals round the aubergines. And it may have a slightly different texture when you defrost it, but it will be perfectly ok.
