Making a recipe dairy-free

MiL is dairy-free (through choice), it's FiL's birthday next month and I'm going to adapt my Hummingbird Vanilla Cupcake recipe for them (and collect some excellent DiL points!). Does anyone have any tips on the best dairy-free alternatives for the milk and butter? I would have considered coconut milk but FiL doesn't 'do fruit'.

Thanks! Thought of giving pure a go. Wasn't sure if it worked for baking.

I've used Pure for baking and it's fine. Love the sound of your cake! :)

I use vitalite and vanilla alpro pouring yoghurt instead of milk. Tip to get extra rise is add egg yolks and beat the whites till peak and fold in!
