HELP. I need two quiz questions to ask chefs.

I'm making up a quiz for work. The two contestants are chefs and I need to ask them one question each on their specialist subject. My cooking knowlege is a little, er, homely so I'm drawing a blank.

Any ideas? Not too difficult.

Hmm, tricky. I'd be tempted to ask things such as:

What are the main ingredients of xxxxx (insert dish)

What is the English translation for Foie gras?

Who was firts British Chef to get 3 Michelin Stars?

I would ask them questions like

'what does florentine refer to when in the title of a dish'? Answer 'spinach'

What is sauce bigarade? A sauce made from meat jus with the juice and zest of oranges usually served with duck.

What are the main ingredients used in a cassoulet? Sausage, white beans and confit of duck/goose fat (actually can't remember tbh)

Those are the sort of things that they should have learnt at chef college
