I would have thought that any of the receipes given in response to the "le cruset" post below would be suitable. There were some nice ones there.

chances are my link won't work but if you look right down the list of threads there is one re slow cooker recipes, I tend to do casseroles and stews in mine

I tend to cook on the stove, and use the slow cooker to keep the food warm - chilli con carne, beef bourginogne, etc.

Any kind of chili/soup/stew. Great way to keep the fat out. I love my slow cooker. Use it every Sunday to make my lunches for the week.

You can find slow cooker cook books on amazon. You could also do low fat Indian/Chinese dishes.
