Hi,
i have a coconut from the supermarket (bought for an event I did) and I'd like to use the flesh for something. I know i can just eat chunks of it but would prefer to do something a bit more interesting. I'm a good baker so a cake is one option but i'm also open to savoury ideas. Does anyone know if fresh grated coconut responds very differently in baking? or can anyone suggest a good savoury dish? Thanks in advance.

Does it have milk inside, or jelly or has it dried up?

i've given it a shake and it makes a sloshing sounds so must have water inside. I've seen that Delia has a fresh coconut cake recipe but anymore suggestions?

What about a satay? I do one with peanut butter, chilli, coriander, veg stock and coconut. Nice with chicken as a sauce or a dip.

There is a really lovely Jamie Oliver salad recipe with sliced mango, red peppers, cress and various other things, with grated fresh coconut on top. I don't have it to hand but it may well be on his website. It is really really tasty :)
