How far in advance can I make cupcakes?

It is DD's 1st birthday on Thursday and I am making some cupcakes. How far in advance can I make them?

Today would be ideal but I think even in a airtight container they won't be great for Thurs?

I have what feels like a million cakes to make this week.

You can freeze un iced cakes, ive never done it so don't know what they turn out like once defrosted. Or make them Wednesday night?

You could make them wednesday and ice them, they will be fine for thursday.

For the future - get a cake pop machine.

Cake pop balls freeze and defrost brilliantly. They can be popped into small cake cases and passed off as mini cupcakes if needed.

I made all the cupcakes for my brother's wedding in advance and froze them. They tasted absolutely fine. No way I'd have been able to make 180 cupcakes the day before!!!!

Freeze them (un-iced) they'll taste as fresh as if you'd just baked them, I do it all the time.
