How do you make nicely cooked but not to crispy wedges?

foll in olive oil (and spices if you want to add some flavour), cook in a hot oven for about 20/25 mins...

my kids like potatoes cut into cubes and done that way too

Preheat the oil in the oven and parboil the cut up potatoes to soften the inside.

hAVE had them in tgi and they always come out really crispy.

Best way is like Blackduck says, bit of oil and in the oven for about 20 minutes. I find adding a dash of chilli powder before cooking is yummy.
