I've just been given 45 freshly picked grapefruit! What on earth can I do with them all before they all go off?

I have frozen citrus fruits and made marmalade later. It didn't come to any harm being frozen.

JamNan, I'm in Brazil Grin I like the sound of seabreezes - how do I make them? Do you think I can make grapefruit curd or will it be disgusting? Not really into jam or marmalade but I make a lot of lemon curd (with lemons from the garden). You might be jealous but really it's ridiculous. Last year I threw away over 2000, yes 2000, mangos from our garden and currently it is banana season. Getting fed up with banana cake/smoothies/ice-cream/bread ... and now with the grapefruits too! I can't cope! Give me an apple. I can't grow them here, too hot!!!

I think grapefruit curd would be ace! Also you could make grapefruit pickle - google a recipe for lime pickle. I did it last year with apples but it would be great with grapefruit too.

Granita/ice cream/sorbet?

I am weeping over your mangoes (that sounds wrong though). A pound a go here and they're normally like rocks!

I'd make
grapefruit bitters (for amazing cocktails)
Grapefruit curd (I think the site 101 cookbooks has a recipe for ginger grapefruit curd)
Grapefruit marmalade
Grapefruit custard creams! There's a dan Lepard recipe for passion fruit custard creams and I bet grapefruit would sub into that perfectly.

Also I would save all the peel and dry half for stews, and candy the other half for any recipe that calls for mixed peel.

You could make lemon drizzle cake using grapefruit instead of lemon - there's a great lemon yoghurt cake in smittenkitchen.cm that works well for this.

I think mangoes and grapefruit would both make delicious curd. Otherwise I think pickle/chutney is the way to go, as it'll keep so well.

Actually could you preserve some like they do in Morocco with lemons? Think you basically just slice them up, cover them in salt and pack them in kilner jars or similar. They keep well and you can use them in stews and curries and stuff.
