Sunday Lunch Inspiration

We always eat as a family at the weekend as it's sometimes not possible in the week but I've lost all inspiration for Sunday lunch. I'm a competent cook but I don't do a full roast coz I'm too lazy, can't be bothered with the faff and it's not worth the amount of washing up! Any ideas for nice big family 'worthy of a Sunday' type meals that won't take me all day to prepare?

I'm doing pulled pork in my slow cooker for Father's Day. Sigh, it was going to be a BBQ, but it looks like the great British weather is going to be true to form.

Shepherds pie, lasagne, pie, fish pie, stew and dumplings, toad in the hole.

I sometimes do some quick easy roasts:

Wrap chicken breast in thick acon slices and roast, if you want you can slice into the breast and put in some stuffing before wrapping. Or

Thick lean pork chops spread with mustard , cover with foil and then roast

And jacket potatoes cooked in the oven don't make much washing up.

Serve with salad?

Stick a brisket of beef in a casserole with quartered onions and carrots and sear. Chuck in a pint or 2 of beef stock, some red wine, bay leaves, cinnamon stick, pinch of nutmeg, squeeze of tomato purée and cook at 130 in the oven for about 6 hours.
Lush with mash, roasties, fresh bread...mmm!
