What can I make today?

I've got a fridge full of 'stuff'. Dinner is sorted (home made stuffed peppers and mushrooms), breakfast done (eggs benedict) but am bored and feel like making stuff so.... ingrediants of my fridge are:

ricotta (not whole pot)
mascarpone (whole tub of)
tomatoes
1 x courgette
a few eggs
half a bag of spinach
bacon
double cream
single cream
boursin cheese
cheddar cheese
white stilton with apricots
mushrooms
spring greens
some antipasta wild mushrooms
some roasted red peppers ina jar

and usual store cupboard ingrediants

What a strange mix of stuff aye.

So, what shall I make?

I'm thinking something in a creamy cheese sauce with your courgettes, bacon, mushrooms etc.

Definitely a creamy pasta sauce bakey thingy! like a carbonara (sp?) thing

I'd either do a baked macaroni cheese with the bacon and mushroom included or do creamed spinach (with mushrooms) yummmm but not sure what you would do with that

I went food shopping hungry and knowing we were at home all weekend (having work done in garden), so just picked up random nice things!

Spinach and ricotta lasagne? Delia does a good recipe but it's got roasted pine nuts in it.

If you have pantry ingredients for pastry then saute the courgettes,mushrooms, bacon and spring greens in a little olive oil and herbs. Wilt spinach and dice. Line a dish with pastry, throw in above, add peppers, ricotta, cheddar and a pinch of nutmeg. Cook on moderate heat until pastry is puffy and browned. YUM

I would have thought you could make a really great cheese and bacon quiche
and some kind of courgette fritters, served on a bed of spinach

Oh, I made a great courgette cake this week. Brought a spare loaf over to an English friend's house, who said, more or less "oooh, cake", and then "um ... courgette cake? really?".

And then really liked it, as did all the kids in the house.
