Portable Impressive Starter Ideas Please

Some bright spark came up with a charity dinner party idea next week for 16 - half provide the food, half make a donation.

I have to bring the starter....but with lots of fussy requirements.

No goats cheese.
No soup.

Person whose house it is being held in will be doing canapés and aperitifs so my usual easy mezze has been vetoed by her.

What about a nice salad - pear, walnut and blue cheese, for example.

Salmon/fish mousse?

Line a loaf tin with clingfilm then cold smoked salmon (you can use scraps & put sprigs of dill or bits of lemon at the bottom for posh decoration).

Mix Philadelphia cheese (I use the chive one for taste) with hot smoked salmon - or smoked mackerel/trout until it's a sticky mixture.

Bung in lined loaf tin and then smooth flat and add more cold smoked salmon on the bottom.
Stick in fridge for a minimum of about 3 hours - overnight is best.
Take to party.
Pull on clingfilm to move mousse out onto plate.
Slice and serve with green salad.

Home made terrine (courtesy of James Martin)

You need

1 loaf tin
streaky bacon
chicken goujons or breast cut into strips
chicken livers
3 types of sausage

Line the tin with the bacon
at random take the sausages out of their skin, mould them into blobs and stick in the terrine.

At random add the odd chicken liver and chicken meat.

You can throw in random things like pepper corns and capers, whatever is in your cupboard.

Finish the bacon parcel

Bake for about 30 mins

when it comes out I put a weight on to get the grease to press out.

Once cold turn it out on to a plate, looks really impressive.
