Evening all. I need to make a lemon sponge cake as part of a birthday cake for Sunday...problem is I'm travelling over the weekend.

So was wondering, if I make it tonight (it's basically a victoria sponge recipe with lemon zest) cool it, wrap it tightly in cling film and store it in a cake tin, will it be ok to decorate and eat on Sunday afternoon??

Thank you!

Absolutely fine Smile and even if it does dry out a bit which I doubt it will if uncut and wrapped then I'm sure you'll be adding some sort of icing to it which will fix that.
