I have a recipe for black pepper tofu and coconut rice that tastes like a take away, if you like chinese food!
serves 4:
for the rice: 400ml coconut milk, 800ml water, 320g basmati
bring the liquid to the boil, add the rice, put the lid on the pan and simmer for about 15 mins til done.
Meanwhile:
chop two onions and start to fry in a little vegetable oil. add 30g finely chopped fresh ginger, four or five cloves chopped garlic, chopped fresh chilli to taste (ie however hot you like it!). Then add some veggies - I like broccoli and sliced red and green pepper, but anything that's good in a stirfry is good! Stir fry for a few minutes then add 200ml water, 60ml soy sauce, 40ml rice vinegar and half tsp worth of ground black pepper (I just go mad with the pepper mill). Fry tofu in sesame oil until crisp, then add it to your veggies.
Scoff.
It is insanely good, easy and pretty healthy. If you're not a tofu eater, meat or fish would work, but if you're willing to try it do, because this is the dish that converts people! buy firm tofu, cut into cubes and cook on a good heat until the edges are nicely browning and crisping.
