Summer batch cooking for freezing- ideas please!

Hi!
I'm 37 wks pregnant and have hit nesting/prep phase! I'm looking for some inspiration for dishes that I can batch cook for myself and DH, and some for us and DS (2.5). I've done the usual bolognese/chilli/curry but am looking for something a bit more fresh and seasonal. Eg I'm thinking that stir fry won't freeze well at all but something of that sort of high veg content. Or any ideas really!

What about ratatouille? You can defrost and add jackets and grilled chicken legs.

you could just chop and freeze veg individually esp cause stir fry veg etc doesn't take long to cook even from frozen but that way the prep is all done
make some soups?

Thanks for these suggestions! They're much appreciated! The courgette risotto looks lovely. I've just always thought that you couldn't freeze rice- I made the chicken and chorizo jambalaya from good food this evening and it was delicious but says it can't be frozen which is disappointing!

I find it hard to think of summer ideas for the freezer. Would be worth chopping chicken fillets/marinade and bag.

Salmon darnes and new potatoes - not strictly batch cooking but quick.
Homemade pizza bases. Also not a freezer dinner but vacuum packed gnocchi is so, so quick and lovely and filling.

Prepare beef/chicken skewers for freezer. Wraps.

Flans/Quiches would be lovely.

Maybe marinade some chicken or make homemade burgers to freeze and have a bbq?
