Vegan picnic

Hi, my husband and i are both fairly new vegans. There is a family picnic at the weekend that we are really looking forward to but i need ideas of things i can take with us. Any ideas for vegan food that we can eat ourselves and share around, that other meat eaters may also enjoy?

  1. Roast some multicoloured peppers, aubergines, courgettes and red onion wiith plenty of olive oil and seasoning. Allow to cool. With some of the micxture: spread houmous on N tortilla bread(s), add a layer of roasted veggies, then wrap (each) tightly into a long sausage shape. refridgerate this for half an hour then cut into c. 4cm lengths which should stay together sufficiently to be bite-sized finger-food. With the remainder of the roast veggies, mix with some couscous, tomatos and pine-nuts to make a salad if it will be the kind of picnic where you can use a fork, or thread onto kebab skewers otherwise.

rice salad

We have a fair few vegan friends and when we meet up we usually take potato wedges and salsa or sweet potato falafels and hummus and I've never had to bring any home with us.

We also take a big pot of pineapple as the kids always complain it's not a proper picnic without pineapple.

Vegan cupcakes - haven't got the recipe handy but in spite of the fact that the ingredients may seem odd they are actually delicious.

If you do sushi be careful to keep it cool in an ice box, rice that's been sweltering can be very dangerous.

My favourite sandwiches have lettuce, hummus, grated carrot, grated cucumber, avocado, cashews and sweet chilli sauce. Yum.

Hot food... get some vegan mayo and do pasta with diced red pepper, chilli flakes and corn.

Wedges with chilli/jalapeno/vegan yoghurt sauce.

Gigantes (spicy butter beans)
Greek recipes good because they use olive oil instead of butter
