question about salmon

I took some salmon fillets out of the freezer yesterday to defrost and we didn't end up eating them.
I know I cannot re-freeze them but can I cook them and them freeze them as we probably won't eat them tonight either.
Surey if they are throughly cooked this would be ok?

you cant re freeze it, even if its been cooked as far as i know.

you could probably get away with it if you makes some kind of pie .. ie flaked fish

you can cook them then freeze them, but the texture will suffer horribly as you'll have to reheat them after freezing.

Better to cook them both and eat one cold with mayo in a sandwich tomorrow (yum yum!)

why don't you cook it then put in fridge? should still be ok tomorrow. how are you going to cook it?

personally I wouldn’t risk it, wouldn’t enjoy anything that i thought was a potential health risk, esp if for the kiddies. No health expert though so just my opinion :)

I thought it was only shellfish that shouldn't be refrozen?

I was going to bake in the oven with lemon juice , we are travelling up to nottingham tomorrow so may not be able to eat it tomorrow night either, but the sandwich idea is a good one

We often cook and chill ours to eat the next day.
I bake it in foil (with soy sauce,honey,and chopped chillies)
Its delicious cold.

ooh, yes, in-car salmon sandwiches!
(I do them in griddle pan if I'm planning to serve them cold - gives a nice crispy outside)

Thanks everyone, I think salmon sanwiches it might be. Dh wants to get a paper before we go so I could treat us to lovely rolls from tesco.

I think poached salmon is best cold and in sandwiches (if that makes any difference at all )

Why can't you refreeze them? I hear this often (in the UK) but I've never understood why. What happens the second time you freeze it that didn't happen the first?

I think it's a quality rather than a safety issue

I think its a mixture f both sftey and quality of the food I can definaltly imagine it being a minky dry if I had cooked it unless in a pie or quiche.. which actually I could also do..

Thanks everyone. Zippititoes it would seem you are right. I would imagine it would be very dry and possibly a bit rubbery!

Ah, so it's actually the leaving it out at room temp for a dangerous amount of time that is the problem and not the refreezing. Sometimes I think the safety warnings think I'm stupid.

Maybe they could put one on swimsuits that say "remember to surface and breath air when swimming/diving"
