I have:

courgettes
peppers
red onions
sweet potato
butternut squash
carrots
leeks

for roasting. Obviously carrots are going to take longer than peppers so I'm thinking two trays, one with stuff that takes longer, and one to put in later.

So which veg in which tray and how long will they take to roast?

thanks!

I'd probably put them all in together and keep moving them around. But otherwise sweet potato and carrots in one remainder in the other? (On phone so can't see your list!)

Not least as it depends how small you've chopped them-if the squash is diced it'll be pretty quick.

MsPickle · 02/06/2013 13:57

Sorry, just saw you'd asked how long! I'd reckon on 45 minutes -1 hour depending on size/oven temp.

LowLevelWhinging · 02/06/2013 13:59

ok thanks.

Any idea how long they'd take? 30 minutes? assuming I've chopped carrots and squash small.

Carrots, sweet pots and squash - parboil for a few mins and give them ten mins before you put the other stuff in. Leeks burn really quickly and then taste bitter, so you don't want them in as long.

My way would be about 45 mins all told, post par-boiling, I'd say.
