Breadwise, everything I think of is Italian rather than Spanish. Or maybe I am overthinking it.

Maybe a butterbean stew or a chick pea stew I had a nice chorizo and chickpea stew so you could make that without the chorizo?

I'm sure I had a really delicious cold green bean salad at a tapas place once. I'm sure it had pine-nuts in it, and tomatos, and I think some kind of cheese but I can't remember what!

I could eat tapas all day. Yum! Here's a few more ideas.

  • Pan tumaca. Cut thick diagonal slices of rustic bread, lightly toast (or not), rub with garlic, rub with very ripe tomato, drizzle olive oil and season with salt.
-Pisto manchego, a kind of ratatouille made from tomatoes, onions, aubergines and courgettes. Nice served warm with some bread.
  • cold white asparagus with mayonnaise or lightly grilled or fried (like tempura) green asparagus with sea salt.
  • chick peas with spinach. Olive oil and garlic in pan. Fry off some onion. Stir in spinach and cooked chick peas.
  • montaditos which are small slices of bread with different toppings piled on top, often with toothpicks to hold it all together. Try with tortilla with fried green pepper, manchego with caramelised onion, olive tapenade, goats cheese and tomato.

I am planning on doing a gazpacho sorbet.

Pisto manchego sounds good. Going to add that to the list. I also love anything with spinach in.

You can make tortilla (Spanish omelette ) with Spinach. Mushroom croquetas. You could do pinchos (skewers) with just an assortment of vegetables. Habas, which are baby broad beans, but they are really juicy like petit pois not dry like big fat English broad beans.

Are you including or excluding fish/ shellfish? King prawns, prawns with chilli (gambas pil pil),Pinchos with monkfish and prawns; sardines, especially barbecued. Ensalada Russe which is potato salad with vegetables with or without tuna or prawns

I'd love to do prawns but one person has a shellfish allergy. Fish is definitely an option though.

Manchego with membrillo - although I suspect manchego is made with animal rennet. Sheep's cheese or goats with honey on crostini, tomato and red onion salad. Giant Butter beans in tomato sauce. Marinated artichokes, olives, pepperdew - sweet spicy peppers stuffed with white soft cheese.
