Easy salads

I need some nice salad ideas. Must be quite basic as need to make from store cupboard and local shop

Last week we had couscous salad: Couscous (must be the easiest thing to "cook" in the world), cucumber, red onion, garlic clove, lemon juics, olive oil, chop,chop,chop,mix,mix,yum, yum

Just made potato salad the SA way with eggs, scallions, mayo and condensed milk.

Had peppers, olives, onions, tomatoes earlier but hot with pasta - would have been just as nice cold with pasta. Or student fav sweet corn, pasta, ham & mayo?

I also have stuff for sushi in the cupboard & you can add anything to that or just have the sweet rice balls with lettuce & tomatoes etc

Green leaves, black olives, tomatoes, onion, chicken (usually left overs) and chorizo with a balsamic dressing. My fav!

I make a tuna nicoise salad occasionally (using tinned tuna). A couple of bags of salad leaves, 4 hardboiled eggs quartered, a few anchovies, a few new potatoe, cooked with skins on and quartered, a handful of cherry toms halved, a handful of cooked green beans and some sliced black olives. Oh - and a small can of tuna, drained. Tip salad leaves on large dish - arrange everything else on top. Dress with salad dressing (I use balsamic). Very filling (serves 4)

I make a tuna and bean salad very similar to this. I use flageolet beans and lots of freshly squeezed lemon and chopped herbs for extra zing. It's a great summery dish served with crusty bread and new potatoes.

Grate loads of carrot (preferably in food processor) and mix with few generous handfuls of raisins (or sultanas) which have soaked to plump juiciness in lemon juice. Add more lemon juice depending on how zingy / juicy you want it. Better prepared a day in advance. Can add some crunchy chopped nuts or toasted pine nuts just before serving.

Greek salad is easy-peasy. Green leaves, chop up cucumber, red onion, tomatoes, add black olives and crumble in feta cheese. Yum!
