Can anyone tell me a good way of preparing fenchel? Bought some but I've never used it before.

I don't even know what fenchel is! I was tempted to sign up for one of those services that deilver in- season, organic veg. every week, but felt worried I would get ones I do not recognise. Is it like fennel?

Fenchel is German for fennel.

I make a winter coleslaw with finely sliced (on a mandolin) fennel, red cabbage, and chopped apple.

I cooked it thinly sliced, fried in butter (so much for in- season and organic healthy fare), mushed into mashed spuds.

look up the bbc good food fennel and sausage pasta recipe - I made it last week after being given some fennel and it was really lovely and very easy to make. It says fennel seeds but I just chopped the fresh stuff and added and blitzed with a hand blender.

I slice then wrap it in a foil parcel with a knob of butter and bake it in the oven. Or bake with cheese and cream or cheese sauce.

lifesagame I don't have chilli flakes but do have spicy sausages, I'll try that and see how it works out

It does sound good, I am going to try that one too. OK following the advice on the thread, I cooked it today and it was quite good so I'll be buying fennel again! THanks everyone.
