Easy Low GI pudding needed

And I haven't a clue where to start. Any ideas?

I need it to be easy and not require tons of equipment as I'm a dessert amateur.

Low GI means unprocessed food, low in sugar, easy on the refined carbohydrates. So something simple like a fruit compote, sweetened with some honey and cinammon, topped with toasted oats and almonds and a dollop of greek yoghurt

I like organic probiotic natural yoghurt the non zero fat stuff with fresh fruit salad. The fruit sweetens the yoghurt and you feel like you're having something creamy.if you find it still too sour, you could add a small drizzle of agave syrup. Add a few toasted seeds, nuts for crunch and protein
