baking experts - fatless sponge cake what did I do wrong?

It came out flat - is that right? Very unattractive tastes okay though.

Just used 75g self raising flour, same amount of caster sugar and 3 large eggs.

Would appreciate any experts comments as thinking of trying again. Thank you.

Did you whisk the eggs and sugar till they were really fluffy and pale? Did you fold the flour in carefully so you didn't knock the air out?

Whisk the egg whites first. Til really stiff.

Then add sugar and whisk again.

Then add yolks and flour and lightly whisk.

That's how I do it.

I hate to say it but it's a recipe from an old WI book. And it works every time. I've never had a flat sponge.

If you want I can go and dig it out?

Thank you. Bowl was totally clean. I know I need a new oven but also the whisking time probably wasn't long enough, will try again the FrebbieMisaG... way.
