Any Rhubarb recipies?

Other than the good old crumble what do you wise people do with rhubarb? I have been given a bag full of the stuff!

I roast it in a little bit of orage juice and agave nectar.
I serve it either with pork or oily fish like mackerel.

Rhubarb jam is really nice.

I cooked mine down last night (4stalks) with a punnet of strawberries and some sugar till its a lumpy pulp, serve hot or cold over vanilla ice cream. Simple and delicious!

Odd Yes, you can use honey too.

I poach the rhubarb in its own juice with orange zest and a little sugar. Remove rhubarb with slotted spoon and reduce the juice, then pour it over the fruit.

Also made rhubarb chutney

Rhubarb fool! Stew it with some sugar and then mix in cream or custard. Love it.

These are yum yum yummy! Made a batch this afternoon and only half of them left.
