Finally got round to making her lovely scrummy lemon drizzle cake (or dribble cake as ds1 calls it) earlier this week and have now made ANOTHER coz its all gone!!

Instead of putting lemon rind into the cake, put 4 tbsp of COCOA powder in.

For the topping, melt some chocolate- large bar more if you fancy (in the microwave for a couple of mins, but keep an eye on it). Add a slurp of oil. Pour over cake. When it is cool it will leave a lovely thick, but smooth chocolate layer on top of the cake.

Of course should you wish you could break some pieces of chocolate and stir that in just before pouring the mix into the cake tin to bake. Choccie buttons work too.

Or you can mix cocoa powder in with icing sugar and a little water. Or you could add lots and lots of icing sugar to melted chocolate to get a more fudgy topping.
