Ideas with evaporated milk please!

Hello,
I was just having a rummage in the store cupboard to check whether I had the ingredients for making millionaire's shortbread. I've got both condensed milk and evaporated milk. I will use the former for millionaire's shortbread but the evaporated milk needs to be used at the end of the month. Shame to waste it so any ideas what I can do with it please?

Lovely just as a cream substitute.

Or whisk until it is thick and foamy, then stir in some jelly (dissolve cubes in half the usual water). Leave to set.
